Tomato, Peach, and Basil Salad
This 10-minute salad adds a savoury twist to juicy in-season peaches and nectarines.
Ingredients
1/2 small red onion, thinly sliced
1 tbsp. red wine vinegar
Kosher salt and pepper
1 lb. heirloom tomatoes
1 lb. yellow peaches or nectarines
2 tbsp. olive oil
1/4 c. basil leaves
2 oz. feta, broken into pieces
Directions
1. In small bowl, combine onion and vinegar with 1/4 teaspoon salt. Let sit 5 minutes.
2. Cut tomatoes and peaches into wedges and arrange on platter.
3. Stir oil into onion mixture and spoon over fruit, then sprinkle with basil, feta, and cracked black pepper.
