Chef Carlton began his culinary journey with an internship at the Protea Hotel group, after which he travelled to Dubai to work at the 5 star Atlantis at the Palm. From there Chef Carlton went onto the luxurious Ellerman House as sous chef and private chef for their villas. The highlight of his experience there was cooking for Golden Globe actress, Meryl Streep, during her 9 day stay. He then joined Arabella Hotel as a sous chef before being promoted to executive sous chef and now most recently Executive Chef.
